PORTUGUESE MILK PUDDING
(Portuguese recipe of the Beira region: Pudim de Leite)

Traditional desserts from the Beira-Baixa in Portugal were originally home-made using very healthy ingredients like eggs and milk that were produced locally. In those old times, there was no baking paper, and our grandmothers used to put hot ashes on the lid of the cooking pan (which was mostly made of iron) to prevent drops of condensation from forming that could cause lumps in the pudding when cooking.

Milk Pudding from Beira-Baixa

Ingredients
. 1 teacup of eggs
. 1 teacup of sugar
. 1 teacup of milk
. 1 tablespoon of lemon juice

 
Handy hint: In a pressure cooker, the pudding takes about 30 minutes to cook.

 

Preparation
1 - Take a little of the sugar and caramelize it with the lemon juice.
2 - Line the inside of a pudding mould with the caramel.
3 - Beat the eggs and sugar together. Then add cold milk and pour over the caramel in the mould.
4 - Cook in a pan of water "bain-marie" for about one to one and a half hour.
5 - Let cool down before putting the pudding on a plate and serving. It's delicious!
